The domed lid and round belly permit maximum internal heat circulation and because of its round bottom any cooking liquids will naturally find the lowest point and prevent burning. The gutter around the edge of the lid may be used to hold hot coals when cooking outside. Once the dish is done you can wrap it in a large bath towel and leave it overnight. It will stay quite hot and will have "slow-cooked" to ever greater tenderness.
