With this efficiency also comes quality: once available only to commercial kitchens, this pan is made of professional-weight aluminized steel; it won't buckle under intense heat and will consistently provide fast and even heat distribution. Foods bake and brown uniformly without constant attention from the cook. Bakers unaccustomed to heavy-gauge aluminized steel should be mindful of cooking time at first since its efficient heat transfer decreases cooking time.
