Hand honed and bevel edged, this classic slicer is used to cut thick or thin slices of poultry, ham, and beef, as well as for more precise tasks, such as mincing garlic and quartering bok choy. Smaller than a regular carving knife, this 8-inch blade is the proper tool for carving medium-size game, including pheasant, rabbit, and quail. This blade is taper ground for extra sharpness, and the tang extends all the way through the ergonomic Black Delrin plastic handle, adding heft and balance. Although Black Delrin is dishwasher-safe, it is best to hand wash fine cutlery like this in warm, soapy water.
