Review LamsonSharp 59953 Fire 7" Kullenschliff Santoku Knife / Lamson & Goodnow:

LamsonSharp's Fire series forged cutlery feature beautiful translucent acrylic handles, with a fire-like pattern (fire pattern varies from knife to knife). They are extremely resistant to water. Prolonged exposure to moisture won't effect the performance or appearance of these knives. Air pockets along the blade edge (known as kullenschliff, granton edge or hollow edge) help to keep the knife moving freely and reduce sticking. Santoku knives have a sheep's foot blade style - meaning the gently curved tip of the blade visually resembles an ungulate's (a hoofed animal) hoof. The word Santoku means "three virtues" in Japanese, which refers to the tasks of slicing, dicing and mincing. The blades are one-piece full tang, made from hardened and tempered high-carbon stainless steel from Solingen, Germany. Three nickel silver rivets hold the handles in place on these perfectly balanced and weighted knives. The taper-ground blades are polished, hand-edged and honed. Individually packaged in a black wooden gift box, the LamsonSharp Fire Series knives make for a stunning gift. [+]
All LamsonSharp knives are covered under the Sharp For Life program. All LamsonSharp knife owners can have their knives sharpened by the craftsmen who made them, for life. Every open stock LamsonSharp forged knife also comes with its own LamsonSharp KnifeSafe - a durable, easy-to-care-for, nontoxic, food grade, clear polypropylene sheath. The Knifesafe sheath is dishwasher safe and features tabs that clamp tight, and rubber pads that hold the knife securely in place for safe storage and transportation. Review Shun Pro 4-1/8-Inch Deba Knife / Shun VG0105D:

The Deba knife is the style choice of Asian chefs for cutting and boning fish and poultry. Because the thicker blade requires less pressure, the razor sharpness of the single-bevel allows bones to separate from flesh with little effort, leaving the most delicate food well-intact, a key to perfect presentation. The shorter blade on this Shun Pro is also a good choice for preparing small produce. About Shun Pro:Feature traditional Japanese blade design for the ultimate knife connoisseur- a one sided, beveled edge with a hollow ground back. This blade design creates an air pocket between the blade and the food being cut so only the cutting edge of the blade touches the food for superior stick resistance and the cleanest cuts. Made in the ancient city of Seki, Japan, Shun Pro knives rely on extremely sharp 2. 5mm blades, made of a single piece of Japanese VG10 steel for strength, called the Honyaki style in Japan. It offers precision slicing, cutting and chopping that is unprecedented by any of its German competitors. Sharper out of the box than other knives, Shun Pro knives feature a traditional Japanese blade, with a one-sided beveled edge and hollow-ground or concave back. Japanese chefs in particular prefer the single bevel because it can be honed backed to its original sharpness, even after hours of slicing, using a whetstone. [+]
In addition, the hollow ground divots on the back Resembling a solid, small-scale chef’s knife, this 4-1/8-inch Japanese Deba slips easily between flesh and bone and offers a broad blade for transporting foods. Ideal for chopping or boning fish, poultry, and other meats; this sturdy knife is the smallest of three Debas in the Shun Pro line of professional cutlery. Its small size provides maximum control and skillful precision while a comfortable heft enables it to chop heartier foods effectively. Leveraging a 90-year history of superior workmanship, Shun Pro knives are precision-forged in Japan by renowned blade manufacturer KAI. Combining high-carbon stain-resistant "super steel" with a one-sided, single-bevel design results in an exceptionally strong, razor-sharp blade. Holding its sharpness longer, a Shun knife offers simplified maintenance on top of its superior performance. Flipping the knife over shows a subtly concave backside created to resist sticking and avoid damaging food. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony Pakkawood handle. A traditionally offset stainless-steel bolster protects knuckles while a steel end-cap finishes the piece. Although dishwasher-safe, hand washing is recommended. This product includes a lifetime warranty. - Amy Arnold.

Review Wüsthof Culinar 7-Inch Hollow Edge Santoku Knife / Wusthof 4179:

The Santoku knife is a Japanese chef's all-purpose knife, the equivalent of a European chef's knife. "San" means three and "toku" means good things. It cuts everything: onions, vegetables, cabbage, fruit, herbs and meat. And because of the blade's shape (which facilitates "rocking"), it's also ideal for mincing and dicing. About Wusthof and Culinar???Introduced in 1999, the Culinar series features an elegant satin finish throughout. The blade, bolster and tang seamlessly blend into the 18/10 stainless steel handle. Precision forged in Solingen, Germany since 1814, Wusthof knives are designed for maximum strength, safety, balance and heft. Precision forging and single piece construction mean no stamping, welding or shortcuts - only solid quality you can feel. Elegant satin-finish handles sculpted from 18/10 stainless steel distinguish Culinar cutlery from Wüsthof's other cutlery lines. Otherwise Culinar knives embody all the virtues of other Wüsthof knives that have earned the German manufacturer world renown. [+]
The principal parts of a Wüsthof knife-blade, bolster, and tang-are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. Blades and beautifully formed bolsters are not as thick as some knives'. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action. This 7-inch santoku is a Japanese cook's (or chef's) knife-a low-tip style with a broad blade. Because the cutting edge is less curved, it provides less rocking action than a European-style cook's knife. However, for straight-down slicing and precise chopping it's superb. Alternating hollows on each side of the blade create air pockets, allowing slices to fall away cleanly. This knife should be hand washed. -Fred Brack.

Review Alton's Angles by Shun Angled 5 1/2 Inch Santoku Knife / Alton Brown DM0731:

The Santoku knife is versatile, as its name in Japanese implies ???three virtues??? ??? in this case, chopping, mincing and dicing. And especially for smaller foods, such as peppers, potatoes, or cucumbers, this 5. 5-inch version is an ideal choice. Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of high-carbon stainless, it delivers precision slicing, cutting and chopping unprecedented by its competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet can be honed using a standard steel or sent to the factory for free sharpening. The wavy, Damascus-look pattern on the blade offers stick resistance, reducing prep-plus it's rust-free. The Alton Angle, a design contribution of cookbook author and celebrity chef Alton Brown, provides more finger and knuckle clearance than a standard, straight knife allows while cutting and slicing. The 10-degree angle at the bolster also provides extra leverage to improve control and efficiency, particularly useful with smaller knives. The ebony Pakkawood handle, made of a durable white birch wood and resin combination, has a unique curved.

Review Shun Pro Cutlery Collection / Shun Shun Pro COLLECTION:

The Shun Pro line is designed in the single-bevel style preferred by Japanese chefs. With the broad half-inch bevel, a knife can be sharpened on a whetstone to achieve the exact angle and sharpness needed for the uniform slices required in Japanese cuisine. Moreover, the back of each Shun Pro blade features a long concave hollow that helps release food quickly, in the same manner as the multiple front hollows on a santoku knife. Differing from multi-layer Shun Classic knives, Pro knives are formed from a single piece of VG-10 steel for strength, a process known in Japan as the Honyaki style, which results in an extremely sharp edge. Featuring the classic Shun "D" or tear-drop-profile handle, made of a resin and hardwood fusion known as PakkaWood, Pro knives are most suitable for right-handed users. While dishwasher-safe, Shun knives should be carefully washed and dried by hand, then stored in a wooden block. Shun knives make exceptional gifts for the home chef, and are covered by a lifetime warranty.

Review Furi FX 9-Inch Coppertail East/West Knife / Furi Cutlery FX 519:

Furi 9" East/ West Knife - FX Forged with Coppertail FX519 9" FX East/West knife is our most popular shaped blade becaus Chefs who love Australian-designed Furi Pro knives will swoon over the new premium-level Furi FX. Standing for Forged Exoskeleton, the FX knives are constructed out of a single piece of German stainless steel, resulting in superior strength and hygiene (no cracks or joints to collect bacteria). As with Furi Pro knives, the FX wedged handle is designed to prevent the hand from slipping toward the blade during use, and features a finger-notch and ergonomic curve that reduce strain and calluses, especially for arthritis sufferers. This handsome Coppertail knife is known as the East/West because it combines the traditional scalloped edge of a Japanese santoku, excellent for thin slicing of delicate foods such as tomatoes, with the rocking and chopping motion of a Western chef's knife. The beautifully balanced knife feels substantially hefty and features an extremely sharp blade that is easily sharpened. As the blade wears and lightens over time, the copper "tail" on the handle can be filed to counterbalance the weight. At 9 inches in length, the knife makes a superb all-around kitchen knife, and a fabulous gift for the professional home chef. Like all Furi knives, the Coppertail should be washed and dried by hand, and carries a lifetime warranty. -Ann Bieri.

From Bunmei comes this 10. 5-in. Tako Sashimi Knife. BUNMEI 10. 5-in. Tako Sashimi Knife Thick at the back and blunt at the end, the narrow, 10-1/2-inch blade on this professional-quality Japanese knife is designed to precisely fillet and slice fish. (Tako or takohiki is the eastern Japanese name; in western Japan this type of fish knife ia called a yanagi and is pointed. ) The shape, weight, and wood handle-which has a ridge to ensure a secure grip-are traditional, but the blade is made of thoroughly modern, extra-hard, molybdenum/vanadium stainless steel so it retains its edge longer than high-carbon stainless-steel blades.
