Review Chroma Type 301 Designed By F.A. Porsche 10 Inch Chef Knife P01 / Chroma P01:

Chroma type 301: 10" Chef Knife P01 The chef's knife is an all-purpose knife used for slicing, chopping, dicing, mi Cutting with a Chroma Type 301 knife is like driving a Porsche, and for good reason. Designed by Ferdinand A. Porsche (the designer of the Porsche 911) with input from renowned Austrian chef Jörg Wörther, Chroma Type 301 cutlery excels in both performance and looks. Sleek and sexy, each knife looks like one seamless piece, but the blade and handle are actually different types of steel. The blade is crafted of superfine Japanese 301 steel and hand-sharpened into an acutely sharp angle for precision cutting. The handle is made of durable 18/10 stainless steel, triangular in profile and flat-topped for leverage, a totally unique and ergonomic design. Announcing the transition spot between handle and blade is a metal "pearl" that lets the fingers know their position, in place of a bolster. The comfort and control, not to mention the spectacular visual appeal, of a Chroma Type 301 knife have made ardent converts of many chefs worldwide. This Chroma 10-inch chef's knife is the all-purpose workhorse for chopping, mincing, dicing, and slicing. At first, the handle may seem small in comparison to the large blade. [+]
However, the knife feels exceptionally well-balanced and stays comfortable during long bouts of food preparation. After use, Chroma Type 301 knives should be immediately washed and dried by hand, and placed in a storage block for safekeeping. To sharpen, use only a Chroma original 301 whetstone, never a sharpening steel which can damage the fine blades. Chroma Type 301 knives make exceptional gifts and are covered by a lifetime warranty against defects. -Ann Bieri.

Review Shun Classic Alton's Angled 5.5-in. Santoku:

This santuko blade ("santuko" from the Japanese word for "three virtues") does all your chopping, dicing and mincing with a handle set at a smaller 10 degree angle instead of the Shun Classic normal 16 degree angle. The Food Network's Alton Brown worked with Shun to produce this knife that allows both a firm, precise grip and full contact with the cutting board and no scraped knuckles! The natural curve created between the blade and the user's arm makes superior blade control even easier. The VG-10 steel core blade with 16 outer layers of stainless-steel is stain- and rust-resistant with a razor-sharp beveled edge for exceptional cutting performance every time. Product Features• VG-10 stainless "super steel" holds an incredibly sharp edge longer• Kasumi Method, the traditional Japanese knife making style, clads a protective layer of stainless-steel over a core of extremely hard carbon steel• Blade's distinctive moiré pattern helps ensure superior strength• Razor-sharp, long-lasting edge is ground to 10 degree angle• "D"-shaped handle design for supreme comfort and control• Ebony-black PakkaWood genuine wood handle is infused with a waterproof resin for long-lasting durability• Full tang construction• Stainless-steel bolsters and end caps• Rockwell Hardness rating of 61 safeguards a superior sharp edge• Dishwasher-safe• NSF approved• Made in Japan• Limited lifetime warranty• Presentation box included.

Review Global 10-Inch Two-Sided Sashimi Slicer / Global G47:

High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges are also ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives-of which this 10-inch Sashimi slicer is an example-have thinner blades and are lighter than traditional European-style knives. And unlike the traditional one-sided sharpened Sashimi knives, this two-side knife, which is ideal for thinly slicing fish and sushi rolls, can be used for both right and left handed chefs. Global also did away with bolsters on its original knives to reduce the weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as the blade is maneuvered. A finger notch between the blade and handle provides safety. Stainless-steel handles are Global's most striking feature. [+]
They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges, and they carry a lifetime warranty against defects and breakage. -Fred Brack.

Review Shun Steel 7-Inch Santoku Knife with Scallops / Shun MH0718:

Shun Steel 7" Granton Santuko Knife The Shun Steel line is for those who prefer the simple elegance and easy care of cutlery with pure stainless steel handles. The Shun Stainless Steel line offers the same grace and elegance as the Shun Classics, but with a seamless, one-piece stainless steel bolster, handle, and end cap. Like the Shun Classics, the Shun Steel line also features their uniquely stable "D" shape handle design as well as the clad VG-10 blade. The "D" shape precisely fits the way the hand curves around the handle. The asymmetrical bolster is ground out more on the right side to provide proper finger placement and an easy, secure grip. Like the samurai sword, the Shun blade is sharp and flexible - ideal for food preparation. Hard, flexible VG-10 "super steel" is clad in layers of high-carbon stainless steel that protect the VG-10 and give the Shun its Damascus-look pattern. Even the pattern serves a purpose, ensuring that foods stick less during slicing and dicing, which results in faster and easier food preparation. Features of the Shun Stainless Steel Series include: VG-10 stainless steel is clad with 16 layers of SUS410 high-carbon steel on each side, producing a 33-layer rust-free Damascus look. VG-10 "super steel" is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium. [+]
VG-10's Rockwell Hardness rating of 61 ensures that it takes and holds its incredibly sharp edge longer. Shun Steel knives feature stainless steel handles with the unique "D" shape for stable, easy grip. Stainless steel bolsters and end caps. Dishwasher safe. NSF approved. Shun Knives were formerly known as Kershaw Knives. Made from VG-10 stainless steel, Shun knives are specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is clad with 16 full layers of SUS410 high-carbon stainless steel on each side, for a total of 33 layers. These layers not only protect the VG-10, they create an exquisitely-detailed surface reminiscent of Damascus or pattern-forged steel, the kind once used for Samurai swords. As a result, the knives are simply stunning to look at-much like antique Damascus knives but without their tendency to rust. Ideal for chopping fruits and vegetables, this santoku knife features a 7-inch high-carbon stainless-steel blade with a scalloped edge that helps slice rather than crush delicate foods and keeps cut food from sticking to the blade. Its seamless one-piece stainless-steel bolster, D-shaped handle, and end cap provide ergonomic comfort and maximum safety. As sturdy as it is lovely, the knife is officially safe to put in the dishwasher-although it's so good-looking you might find yourself hard-pressed to do so. Shun knives carry a limited lifetime warranty. -Mary Park.

Review Henckels Twin Select 7-Inch Santoku Knife / J.A. Henckels 30447-180:

Henckels Twin Select - 7" Santoku - 30447-180 A santoku knife is often called an Asian chef's knife. They have a straighter edge than a chef's knife, and a more rounded Distinguished by 18/10 stainless-steel, satin-finish handles, Twin Select knives embody Henckels's world-renowned craftsmanship. Henckels uses a high-tech welding process to form the knives in its first-rate cutlery lines. This process combines three types of high-carbon stainless steel into a single piece so that each part of a knife-blade, bolster, and tang-performs optimally. This 7-inch santoku is a Japanese chef's knife, a low-tip style with a broad blade. The cutting edge is less curved so the santoku provides less rocking action than a European-style chef's knife, but for straight-down slicing and precise chopping it's superb. Shaped like a gentle wave to fit the hand snugly, the ergonomically designed handle contains a full rat-tail tang and is fully watertight with no gaps. Though the knife is dishwasher-safe, it should be hand washed to protect the edge. It carries a lifetime warranty against defects. -Fred Brack From the Manufacturer The Twin Select range is a master blend of function and design. [+]

Review J.A. Henckels Twin Cuisine 2-Piece Asian Set / Henckels 30306-100:

From the Twin Cuisine line, this Asian cook's set includes two knives - a 4-in. paring knife and a 5-in. Santoku. The Santoku has indentations along the blade to help prevent food from sticking as you slice. The Twin Cuisine line from Henckels features knives that are forged from one piece of steel with full tang handles that have no rivets - you actually can see the piece of steel as it runs from the blade to the butt of the handle. The Twin Cuisine knives feature the company's Friodur ice-hardened blades for excellent cutting performance. All TWIN?? Cuisine knives are manufactured using the traditional hot drop forged process, due to the exclusive horizontal tang design. Features are: One piece constructionHeavy weight-durableFRIODUR?? ice hardened for maximum no-stain properties and more blade strength One of the newest premium lines from Zwilling J. A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. [+]
In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The single-piece blade, forged from high-carbon, no-stain steel and strengthened in Henckels's exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand. This two-knife set consists of a 5-inch, hollow-edge Asian-style chef's knife called a santoku, and a four-inch paring knife. The santoku, once unusual, is now a standard kitchen knife in many American homes because of the popularity of sushi and other Asian delicacies. Hollowed-out ovals along the razor-sharp santoku edge reduce friction during cutting, resulting in paper-thin slices of fish, meat, or vegetables. The sharply pointed parer is a necessity in any kitchen for peeling and slicing fruits and vegetables, and carving creative garnishes. Together, the knives make a superb set for the chef who especially enjoys preparing Asian cuisine. -Ann Bieri From the Manufacturer Twin Cuisine is the first quality forged knife to combine the comfort of a truly ergonomic, molded handle with the precision weight and balance of a full horizontal tang. Review Global 10-Inch Yanagi/Sashimi Knife / Yoshikin G-11:

This 10-in Sashimi Knife is sharpened on the right side of the blade only, making it suitable only for right handed cooks. The long, thin blade is ideal for slicing delicate raw fish. The mirror finish near the blades edge encourages ingredients to fall away from the knife and allows the cook to keep ingredients pristine. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Because the knives are very light weight they reduce hand fatigue. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. [+]
Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.
