Review Global 8-Inch Heavyweight Vegetable Knife / Yoshikin GF-36:From Global comes this 8-in. Forged Vegetable Knife. GLOBAL 8-in. Forged Vegetable KnifeThe two most innovative features of Global knives are their edge and the way they are balanced. The most important feature of any knife is its edge and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife. Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. [+]
This steel is hard enough for Global knives to keep their edge for a long time but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance. Care should be taken to keep your Global knives stain and rust free. The MO and VA in CROMOVA 18 stand for molybdenum and vanadium. These two elements give a knife good edge retention. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global's original knives have thinner blades and are lighter than traditional European-style knives, Global also makes a heavier-weight line for cooks who prefer hefty cutlery-like this 8-inch vegetable knife, whose broad blade is as thick as a traditional European knife's and is ideal for precisely slicing and chopping vegetables. Global also dispensed with bolsters on most of its knives, including this one. Most Global knives have hollow handles, but the handle on this knife is solid. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. -Fred Brack.

Review Ken Onion by Shun Cutlery Collection / Shun B000O1Y470:Custom knife designer Ken Onion created this line of super-sharp kitchen knives for Shun, a high-end brand of Japanese-made cutlery. Stunningly beautiful, the knives grab attention for both their curvaceous handles and the ripple designs on their blades, a style known as Damascus that creates tiny air pockets that help prevent food from sticking. The reason the knives are so sharp is the keen 16 degree angle of the blade, made possible because of the very hard VG-10 steel core clad in 32 layers (16 on each side) of high-carbon stainless steel. Carefully designed by Onion to be ergonomic and comfortable for chefs who are either tall or short, left- or right-handed, the handles are made of a resin and hardwood fusion, called PakkaWood, and provide excellent, tension-free control of the blades during long bouts of chopping, slicing, and paring. Covered by a lifetime warranty, Ken Onion by Shun knives should be carefully washed and dried by hand, then stored in a wooden block if possible.

Fabulously elegant, the sleek black PakkaWood handles, made of a hardwood-resin fusion, feature an inlaid traditional Japanese emblem and fine rings of copper and brass near the bolster, while the blades show a decorative scribble line along the edge. What makes these knives really stand out for the home chef is their incredible sharpness, sharper even than Shun Classics thanks to the newest powdered steel alloy known as SG-2. The process used to make SG-2 results in a fine-grained, very dense blend of ingredients that creates a smooth-as-silk knife edge. Shun edges are formed to an unusually keen 16 degree angle, which is one reason they're so prized among chefs who value uniformly thin slices, a necessity in Japanese cuisine.
