Review Lamson Sharp 39657 Rosewood Stamped 7" Santoku / Lamson & Goodnow 39657:LamsonSharp's Rosewood series stamped cutlery feature oiled rosewood handles that are extremely durable. Santoku knives have a sheep's foot blade style - meaning the gently curved tip of the blade visually resembles an ungulate's (a hoofed animal) hoof. The word Santoku means "three virtues" in Japanese, which refers to the tasks of slicing, dicing and mincing. The blades are one-piece full tang, made from hardened and tempered high-carbon stainless steel from the USA. The blades are also taper-ground, polished, hand-edged and honed. Made in the USA. Blade Style: 7" Santoku. Oriental slicers offer the shape of the santuko, or Japanese chef's knife, without the drawback of a hard-to-sharpen granton edge. This is a very important distinction for the long term if a cook prefers the santuko high-rise handle for chopping stir-fry vegetables in quantity, which dulls a blade quickly, but doesn't need the wave-edge specialization for roast beef. Blades on LamsonSharp knives are hand honed for extra sharpness and have a full tang, which means the blade extends all the way through the handle, adding heft and balancing the steel against the traditional rosewood handle. Although these handles are dishwasher-safe, it is best to hand wash fine cutlery like this in warm, soapy water. Oil the handle occasionally with food-grade mineral oil to maintain the traditional luster. Regular use of a butcher's steel will maintain the oriental slicer's sharpness. -Edward Skoog.
